Tiramisu like The Olive Garden’sÂ®
1 10" X 3" prepared sponge cake
2 1/2 oz. strong black coffee
2 1/2 oz. rum
1 1/2 lbs. mascarpone cheese - room temperature
1 1/2 cups powdered sugar
cocoa powder - for garnish
Cut across middle of sponge cake, forming two layers, each about 1 1/2" thick.
Combine coffee and rum and sprinkle evenly over one layer of the cake.
Beat together cheese and 1 cup sugar until sugar is dissolved; slowly add more sugar until desired sweetness is reached.
Spread half of the cheese mixture over the coffee-soaked layer; top with second cake layer; spread remaining cheese mixture over top.
Sprinkle top with sifted cocoa.
Refrigerate for at least 2 hours before cutting and serving.
