TOMATO-FRESH MOZZARELLA SALAD

Vinaigrette Dressing (recipe follows)
1 lb. fresh mozzarella
1 lb. ripe tomatoes (I prefer Roma or Pomadoro)
Fresh whole basil leaves
Salt and pper to taste

Prepare Vinaigrette Dressing. Cut mozzarella into 1/4-inch slices. Cut tomatoes into 1/4-inch slices. Arrange mozzarella slices, tomato slices and basil leaves alternately on plate. Drizzle with dressing. Sprinkle with salt and pepper.

Serves 4

VINAIGRETTE DRESSING

1 T. balsamic or wine vinegar
1/4 t. Dijon mustard
Pinch salt
Pinch pepper
Pinch sugar
1/4 c. oilve oil

In small bowl whisk together vinegar, mustard, salt, pepper and sugar until smooth. Add oil in thin stream, whisking until mixture is smooth. Refrigerate until ready to use. Whisk again before serving.
