Tomato Pudding

This one is an “acquired taste” but once you’re hooked, is definitely a family favorite. We usually only make this at the holidays, as it is very rich.

1 cup brown sugar
1 cup tomato puree (not sauce)
1/4 cup water
2 cups dried bread cubes (about 4-6 slices of bread, crusts removed)
1/2 stick melted butter

Put dried bread cubes (drier the better) in small casserole dish (1 or 1.5 quart). Pour melted butter over and set aside. Combine brown sugar, tomato puree & water and bring to a boil. Simmer 5 minutes and then pour hot over bread cubes. Bake 45 minutes in 350 degree oven until top puffs and browns.

Variation: The original recipe called for 1 whole stick of butter. My mother & sisters use the whole stick in their version, but it is too much for me.

Sometimes for a crowd, I will make a brioche bread and double the sauce recipe. It is incredible.
