Tomato Salad With Honey-Lime Vinaigrette
This honey of a dressing turns vine-ripened tomatoes or any combination of fresh salad greens into a masterpiece.

Servings: 4 servings
4 cups shredded spinach (6 ounces)
3 medium red and/or yellow tomatoes
1/4 cup ReaLime® Lime Juice from Concentrate
1/4 cup olive oil or cooking oil
2 tablespoons honey
2 cloves garlic, finely chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 large shallot, thinly sliced
Divide spinach among salad plates. Cut each tomato into wedges; divide wedges among plates.
For dressing, combine ReaLime®, oil, honey, garlic, salt and pepper in screw-top jar. Cover and shake well. Drizzle over salads. Sprinkle with shallot.
