Tortellini Soup

My neighbor shared this with me several years ago and it’s really good. I hope you enjoy it too!

Tortellini Soup

1 lb. Italian hot sausage
1 large onion, chopped
2 T. garlic
5 cans beef broth (low sodium, low fat is great)
2 cans diced tomatoes
6 carrots, sliced
1 tsp. basil
1 tsp. oregano
8 oz. tomato sauce
4-5 zucchini, med. diced
1 Box lima beans (I don’t like lima beans, so I added green beans-you can omit if you don’t like either).
3 T. fresh parsley
12 oz cheese tortellini (I used a large package of tortellini that you purchase in the refrigerator/freezer section at the grocery).

Fry sausage, onion and garlic; drain. Add all ingredients, except tortellini. Simmer until veggies are nearly done. Bring to a rolling boil. Add pasta. When pasta is cooked al-dente, serve soup!

It is a little different from Chinese soup.In China,this is called dumpling soup.
