Traditional Spinach Salad


1 clove garlic
3 to 4 cups cleaned spinach, torn into bite-sized pieces
2 hard cooked eggs, peeled and sliced
1/2 red-skinned onion, sliced and separated into rings
6 to 8 fresh white mushrooms, sliced
3 strips bacon, fried crisp and crumbled
1/2 cup croutons
Bottled Italian salad dressing

Cut the garlic clove in half and rub the bottom and sides of a wooden salad bowl with cut edge. Discard. In the bowl, toss the spinach, sliced onion, sliced mushrooms and crumbled bacon. Add enough dressing to moisten all ingredients and toss again. Top with the croutons and sliced hard-cooked egg. Drizzle with additional dressing and serve.
