2 medium bananas, peeled then cut into 4 pieces 1/2 cup [125 mL] milk 1/2 cup [125 mL] double churn natural vanilla ice cream 1 [6-ounce / 170-mL] can frozen pineapple juice concentrate 3 miniature scoops double churn natural vanilla ice cream, to garnish Toasted coconut, to garnish 3 pineapple chunks, fresh if possible, to garnish 3 miniature paper umbrellas, to garnish [optional] Mix together banana pieces and milk into a blender until smooth. Add and mix in 1/2 cup [125 mL] double churn natural vanilla ice cream and pineapple juice concentrate until well blended. Pour milkshake into 3 tall glasses. Delicately add 1 miniature scoop vanilla ice cream into each glass. Sprinkle ice cream with toasted coconut. Hang up one chunk pineapple on the side of each glass. Decorate each chunk with an umbrella if desired. Serve immediately.
