Does anyone remember the chocolate and vanilla pinwheel cookies that Keebler(I think) use to sell in the 80’s? I loved those cookies,and I have been trying different recipes over the years to find one like it. The vanilla part was crunchy, but the chocolate part had a different texture. It was softer, and the recipes that I have tried taste like a vanilla cookie and a chocolate cookie. Does anyone know how to make these with the regular vanilla cookie but softer chocolate part?
PINWHEEL COOKIES
Sift:
4 cups all-purpose flour
4 tsp. baking powder
1/2 tsp. salt
Cream:
1 cup Crisco shortening
2 cups white granulated sugar
Add to sugar:
2 eggs well beaten
Then add:
1 tsp. vanilla
1/2 cup milk (alternate with flour mix)
Have:
3 squares (3 oz) unsweetened Baker’s chocolate melted
Divide dough in half. Add chocolate to one half.
Roll white mixture into a rectangular sheet 1/4 inch thick.
Do same with chocolate part.
Place over white sheet. Trim to even, roll like jelly roll.
Wrap in waxed paper and chill until firm (2 hours).
Cut in thin slices. Place on cookie sheet.
Bake in 400 degree oven for 8 to 10 minutes.
