I have been a member for over a year and this is my first post. My wife has MS and cannot do much around the house so I am learning to cook, clean, etc. My concern is that nearly all recipes are for at least 4 or more. I do reduce the ingredients but most dishes just do not seem to come out right. Is it just me or do others have this problem?
This is what I do if I think halving the recipe may not work. For example if it calls for one egg it is very difficult to split an egg. So what I do is make the full recipe, and the 2 of us eat for dinner and I freeze the rest. Most times I end up with 2 more meals that can be pulled and heated anytime I don’t won’t to cook.
Another tip is the smallest container of sour cream in 8 oz, so if a recipe calls for 4 oz I freeze the rest, and within 6 months I will need the other 4 oz.
