Tuna and White Bean Salad
There’s no better reason to keep your pantry stocked with canned water-packed tuna and cannellini or navy beans than this satifying, fiber-rich Italian salad, which can be prepared in less than 10 minutes. Although commercially prepared dressing is perfectly acceptable, vinaigrette made with a fruity olive oil and a good red wine vinegar will taste even better. Sprinkle the top of the salad with chopped flat parsley for a fresh, bright green color contrast.

Serving Size: 1/2 cup
canned, water-packed tuna, drained and flaked - 6 1/2 oz
can cannellini beans, of cooked white beans, rinsed and drained - 19 oz
sliced red onion rings - 1/3 cup
green bell pepper, chopped - 2 tbsp
fresh ground black pepper - 1/4 tsp
prepared light Italian dressing 1/3 cup
Combine the tuna, beans, onion, green pepper, and ground pepper.
Mix in the dressing and toss to combine. Chill before serving.
