Tuna Pate

I was recently at a friend’s house for a small get together and he made a wonderful appetizer. I of course had to get the recipe and thought I would share. :lol:

TUNA PATE

1 lb fresh tuna cut 1" thick or you can use canned tuna.

For fresh: Preheat oven 450 degrees. Coat your baking dish with a little olive oil, place tuna in dish, and cook until barely pink in the center (approx 8-10 minutes). Allow tuna to cool and then mash w/ fork.

1/4 cup fresh lemon juice
2/3 cup finely chopped red onion
about 1 cup mayonaise
1/2 cup finely chopped sun-dried tomatoes
1/4 cup fresh chopped basil
salt and pepper to taste

Place the mashed tuna in mixing bowl and add remaining ingredients.
Mix until it comes to a spreadable consistency - cover and refrigerate.

Ingredients for pesto topping:

1 cup lightly packed fresh basil
1/4 cup parm cheese
3 tbs pine nuts
2 cloves garlic
1/2 cup olive oil

Mix first four ingredients in food processor and slowly stream in olive oil.

You will need approx 12 large slices of focaccia or country bread. Spread tuna pate over bread slices and then a layer of pesto topping. Cut bread into bite size pieces and enjoy!!
