Turkey Chow Mein

Turkey Chow Mein

2 cups uncooked rice
1 large celery rib, thinly sliced
1 medium onion, quartered and sliced
1 can water chestnuts, drained
16 oz frozen stir-fry vegetables
1 can bean sprouts (optional), drained
2 cups cubed cooked turkey
2 teaspoons chicken base (or 2 chicken bouillon cubes)
2 cups water
2 Tablespoons soy sauce
1/2 cup cooking wine
3 Tablespoons cornstarch
1 teaspoon ground ginger
Salt and pepper to taste
Chow mein noodles (optional)

  1. Cook rice according to package directions.

  2. Meanwhile, prepare all the other ingredients. About 15 minutes before rice is ready, spray extra large fry pan (or wok) with non-stick spray. Stir fry the celery and onion until lightly browned, and crisp done. Add the remaining vegetables and stir fry for a few minutes.

  3. Dissolve the cornstarch in the wine. Add the wine mixture and all other ingredients to the vegetables. Cook and stir until turkey is hot and the liquid has thickened.

  4. Serve over hot rice. Sprinkle a handful of chow mein noodles over each serving if desired.
