1/2 c. cooked whole wheat couscous, chilled
1 T. fresh lemon juice
3 sun-dried tomatoes (jarred in extra-virgin olive oil), minced
1/4 c. finely chopped celery
2 T. coarsely chopped scallions
3 thick slices cracked-pepper deli turkey (3/4 oz. each)

Combine couscous, lemon juice, tomatoes, celery, and scallions.

Fill center of each turkey slice with mixture; roll up.
