Turkey Noodle Soup


1 turkey carcass, broken into several pieces
2 qts. water
1 t. salt
1/4 t. pepper
1 onion, chopped
2 stalks celery, chopped
1 carrot, chopped
1 t. dried parsley leaves
1/2 t. marjoram leaves
1 bay leaf
3-inch square cheesecloth
6 oz. noodles, cooked and drained

Combine turkey carcass and water in crockpot; add salt, pepper, onion, celery and carrot. Place parsley, marjoram and bay leaf in center of cheesecoth. Gather up sides and tie. Drop in pot with turkey. Cover and cook on LOW for 5 to 6 hours. Remove carcass and spice bag from crockpot. Remove meat from bones; return meat to broth. Drop cooked noodles into crockpot; cover and cook on HIGH 20 to 30 minutes.

This recipe is designed for 4 1/2 qt. or larger crockpots. For 3 1/2 qt. or smaller crockpots, use chunks of turkey meat cut off the bones, or chicken parts.
