Turkey Salsa Rollups
Makes: 4 servings
1 tablespoon oil
1 jar (16 ounces) chunky salsa
1 package (1 pound) precooked turkey or chicken breast strips or chunks
1/2 cup chipotle or roasted red pepper-flavored hummus
4 (12-inch) whole-wheat or plain soft flat bread wraps or tortillas
1 avocado, chopped
1/2 cup shredded Mexican-style cheese
Chopped iceberg lettuce and cilantro
Heat the oil in a large skillet over medium-high heat; add the salsa.
Heat to a boil, about 3 minutes; lower heat to medium. Add the turkey; cook,
stirring, until meat is heated through, about 5 minutes.
Meanwhile, spread 2 tablespoons of the hummus over each of the flat
breads. Divide the turkey mixture on each flat bread; divide the avocado,
cheese, lettuce and cilantro over each. Roll up; cut in half before serving.
