Turnip Puff

1 turnip, about 6 cups cubed
2 Tbsp butter
2 beaten eggs
3 Tbsp flour
1 Tbsp sugar
1 tsp baking powder
3/4 tsp salt
1/8 tsp pepper
Pinch of nutmeg, if desired


1/2 cup dry breadcrumbs
2 Tbsp melted butter

Cook turnip in boiling, salted water until tender. Drain and mash.

Grease casserole.

To turnip, add butter and eggs. Beat well with wooden spoon.

Combine flour, sugar, baking powder, salt, pepper and nutmeg. Stir into turnip mixture. Pour into greased casserole dish and sprinkle with topping.

Topping: toss breadcrumbs with melted butter.

Bake at 400 F for 25 minutes.
