Tuscan-Style Sausage and White Bean Soup
Ingredients
1/4 cup (1/2 stick) butter or margarine
1/2 cup chopped onion
2 garlic cloves, finely chopped
1/4 cup all-purpose flour
1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk
1 can (14.5 fluid ounces) chicken broth
1/2 to 1 pound mild Italian sausage, cooked and drained
1 can (15.5 ounces) cannellini (white kidney beans), undrained
Salt
Ground black pepper
Preparation
Melt butter in medium saucepan over medium heat.
Add onion and garlic; cook, stirring occasionally, 1 to 2 minutes or until onion is tender.
Stir in flour.
Gradually stir in evaporated milk and broth.
Cook, stirring constantly, until mixture comes to a boil.
Add sausage and beans.
Heat through.
Season to taste with salt and ground black pepper.

Whenever I make this soup, I have to buy enough groceries to make 2 batches, because I know once I make it I will want more soon. So I have the ingredients on hand. Recently I found out the hard way about making my own soups, so I will be looking for a lot more really good soup recipes… I had THAT BUG thats been going around. so for about 10 days I lived on canned soup… well when my doc same me I was headed to the hospital but not for the bug… I had so much salt it triggered edema and I was in congestive heart failure… in 1 week they knocked off 12 lbs of water weight just by doubling diuretics… so skip the canned stuff. Make big batches of a good soup recipe and freeeze some for when you just can not cook.
