TWICE BAKED POTATOES
3 - 4 good size baking potatoes
1 small jar Cheese Whiz
milk
salt and pepper
8 slices of Colby cheese
Wash potatoes and place them in a pan and bake in oven until done. (I do not butter nor wrap in foil for this recipe because you want the potato skin to be hard so you can use the shell.)
Cut the baked potato length ways and shell out the potato into a mixing bowl, saving the potato skin. Mash the potato, add a little milk, the Cheese Whiz, and salt and pepper to a normal mashed potato consistency. Sometimes depending on how large the potatoes, I add a little more Cheese Whiz to get a more cheesy flavor. Spoon potato mixture back into the shells and top each one with a slice of Colby cheese. Place back into oven until heated through and Colby cheese is melted.
