Two-Tone Mashed Potatoes

2-1/2 pounds yukon gold potatoes, peeled and cut into cubes
2-1/2 pounds of sweet potatoes, peeled and cut into cubes
1 cup milk
1 cup sour cream
1/4 cup soft butter
1 tsp salt
1/2 tsp each freshly ground black pepper and grated nutmeg

For the Topping
2 cups cubed crusty bread
2 Tbs chopped fresh parsley
2 Tbs melted butter

Set Oven at 400 degrees F.

Cook each potato separately in salted boiling water for about 15-20 minutes.
( 2 separate pots) Drain and return each cooked potato back into its own
pot. Combine and whisk the milk, sour cream, butter, salt, pepper and
nutmeg.

Divide the mixture between the (2) pots of cooked potatoes and mash till
smooth. Spray a 9x13" baking dish with baking spray and scoop the sweet
potatoes into the prepared dish first. Smooth out with an off set spatula.
Next place the cooked Yukon potatoes on top of the sweet potatoes and again
smooth out using an off set spatula.

Process the bread cubes until they are pea sized. Pulse in the butter and
parsley. Sprinkle over the potatoes and bake for about 20 minutes or until
heated through.
