Tzatziki

Set A Very Fine Mesh Sieve Or A Colander Lined With A Coffee Filter Or Several Layers Of Cheesecloth Over A Bowl.

Add & Let Darin At Room Temperature For At Least 2 Hours, Or Covered, In The Refrigerator For Up To 24 Hours:

2 Cups Yogurt

Toss Together In A Colander:

1 Large Cucumber, Peeled, Seeded, & Diced
1 Tsp Salt

Let Stand To Drain For 30 Minutes. Press The Excess Water Out Of The Cucumbers, Rinse Quickly, & Blot Dry.

Mash Together Until A Paste Is Formed:

2 Cloves Garlic, Peeled
2 – 3 Pinches Salt

Combine The Yogurt, Cucumbers, & Garlic In A Medium Bowl Along With:

2 – 3 Tsp White Wine Vinegar
2 Tsp Chopped Fresh Mint
2 Tsp Snipped Fresh Dill
Salt & Freshly Ground Pepper To Taste
