Ultimate Bruschetta Bread

1 loaf of Italian bread
¼ cup olive oil
1 clove garlic, cut in half for rubbing

3 Ripe Roma ( Plum ) Tomatoes, seeded and chopped coarsely
2 Tbsp fresh chopped, Basil
3 Cloves garlic, minced to add ( more or less Garlic as desired )
2 tbsp olive oil
¼ up grated Parmesan cheese ( Parmigiano Reggiano )
salt & pepper to taste

Slice the bread on the diagonal, into 1/2" thick slices. Grill the bread, or toast
slices until lightly golden brown on both sides. Brush with olive oil and rub with garlic halves.

Chill the tomatoes for at least 1 hour before roughly chopping.

Combine the tomato, basil, minced garlic, 2 tbsp olive oil, Parmesan
cheese, salt & pepper to taste.

Pile the tomato topping on the toast, and serve.

I love bruschetta, but what do you mean when you say chill the tomatoes?

Hint #1: Probably don’t use your oven.
Hint #2: Wouldn’t use the microwave either.
Hint #3: It’s the other major appliance that cools things off.
