Ultimate Chicken Fingers

3 boneless, skinless chicken breast halves, cut crosswise into 1/2" strips
2/3 cup Bisquick (or any baking mix)
1/2 cup grated Parmesan cheese
1/2 tsp salt or garlic salt
1/2 tsp paprika
1 egg, lightly beaten
3 Tbsp butter or oleo, melted
Preheat oven to 450 degrees. Line cookie sheet with foil and spray with nonstick spray. In a large resealable plastic bag, mix Bisquick, cheese, salt and paprika. Dip half the chicken strips into egg then place in bag of Bisquick mixture. Seal; shake to coat. Place strip on cookie sheet. Repeat until all chicken is coated. Drizzle butterover chicken. Bake 13-14 minutes, turning halfway through cooking time; cooking until no longer pink in center. Makes 4 servings.
