What is the recipe for Veg Menchaw soup

Vegetable Manchow Soup

1 cup cauliflower florets
2 carrots
1 cup finely julienned Cabbage
1 bunch scallions
1/2 cup finely chopped Mushroom
1/2 cup finely chopped cilantro leaves
1 tbsp ginger-garlic paste ( use fresh for best results)
3 tbsp soy sauce
1/2 tbsp chili paste ( Its best to use chilies instead of chili paste)
1 tbsp corn flour paste

2 pinches black pepper powder
4 cups of vegetable Stock *****
1 tsp oil
salt as per taste

***** To make vegetable stock, boil all the vegetables in water with a pod of garlic( can be skipped). Do NOT discard this water, this water is vegetable stock.

Finely chop all the boiled vegetables and keep aside. Also chop scallions and keep aside.
Heat oil , add ginger -garlic paste. Add chopped cilantro leaves. Fry till the leaves turn brownish in color. Add chili paste and fry for a couple of minutes. Fry scallions ( keep about a tbsp aside). Add soy sauce, mix everything and stir. Add chopped vegetables. Mix well. Add the vegetable stock, black pepper powder. Boil for about five minutes. Now add corn flour paste and boil till the soup thickens. garnish with chopped cilantro, scallions and noodles.

And for your daily dose of proteins, you could add a egg with the stock. add a beaten egg along with the vegetable stock and stir continuously. till its small bits/ lumps.
