this goes with just about anything!
1 Cup couscous
1 small red onion, chopped
1 Cup chopped fresh vegetables*
1 1/2 Cup Chicken Broth or vegetable broth
1/2 Cup sliced mushrooms
1/4 Cup snipped parsley or cilantro (I am a parsley person myself)
2 Teaspoon minced garlic
Vegetable oil spray
Salt and pepper to taste
Spray large saucepan with oil spray and place over medium high heat. Add onion and garlic and cook until onion is tender (about 5 minutes). Bring to a boil over high heat and add vegetables. Reduce heat, cover and simmer for 10 minutes. Remove from heat and stir in uncooked couscous and cilantro or parsley. Cover and let stand 5 minutes.
(*Vegetables can be a mixture of chopped red and green bell pepper, celery, zucchini or summer squash, tomato, broccoli or cauliflower florets, torn spinach leaves, jicama, grated carrots or frozen vegetables.) I’ve used frozen at times - just run under warm/hot water and drain.
Canned sliced water chestnuts may also be added.
Use a mixture of mushrooms (shitake, portabella, brown, cremini).
