Very Simple Meat Loaf

1 pound very lean ground beef

1/2 pound ground pork

1 package of Lipton beefy onoin soup mix

1 10oz. can Ro-tel diced tomatoes and green chilies

1 teaspoon salt

1 teaspoon black pepper

1 green bell pepper, chopped

1 clove garlic minced

1 egg

1 11/2 cups cracker crumbs

13 cup water

Tabasco to taste

1 Tablespoon garlic powder

Guess all of you will say “Oh No not another meat loaf recipe!!!” Well let me tell it is very, very tasty. And the low temperture and slow cooking is the secret. I have made some changes and they have imporved the taste. If you don’t like it hot use 1 (8 ounce) can of tomato sauce.

Preheat oven to 300 degrees. Chop bell pepper in very small pieces. Place meat mixture in a bowl. Add onion soup mix, diced tomatoes with green chilies, water, cracker crumbs, egg garlic, Tabasco.bell pepper, garlic powder. Blend well (Needless to say I use my very, very clean hands to mix the meat mixture.) Place in a 9 inch loaf pan. Bake approximatley 45 minutes to 1 hour or until done
