6 to 8 oz. Walleye
1 cup Ritz crackers, ground finely
2 eggs, beaten well
3 tablespoons clarified butter or vegetable oil
Dip the walleye into the egg mixture.
Place walleye in ground Ritz crackers and coat well.
Heat oil in pan and sear dark brown on both sides.
Walleye is done when it reaches 165 degrees internal temperature.
