WALNUT BISCOTTI

2 c. flour
1 c. sugar
1/4 t. baking soda
1 egg
1 egg white
1/2 c. chopped walnuts

Preheat oven to 350* F.

Combine flour, sugar and baking soda in large bowl; blend well. Add egg, egg white and walnuts. Mix until mixture forms a smooth dough. (this recipe has no oil, so it must be blended until the oil from walnuts is released.)

Shape into logs 8-inches long and 2-inches across. Place on parchment-lined baking sheets. Bake 20 minutes oruntil golden brown. Slice diagaonally into 1/4-inch slices. Place slices on baking sheet; return to oven 5 minutes or until dry.

Makes 4 dozen
