Although this is a “dinner” thread - what about breakfast??
Fry breafast sausage links; slice; set aside.
Using same pan, in sausage drippings, saute chopped (small - but not fine) onion, red bell pepper, green bell pepper, chopped tomato and fresh mushrooms (optional) adding a pat of butter or country butter (recipe in RECIPE EXCHANGE)
Beat very well with wire whisk:
eggs - salt and pepper to taste and add to veggies when they are tender
add sliced sausage - sprinkling around evenly
“lift” cooked egg, allowing uncooked egg to run underneath
when egg is not as runny on top, flip to turn (loosen first or you won’t like what you see flying in the air!) LOL
immediately sprinkle with shredded cheese of choice
the “flip side” should cook in less than a minute
transfer to serving plate, folding in half, top with slice of cheese of choice
at this point you can place in oven, toaster oven or broiler to melt cheese slice(s)
serve with toast and jam
you can also used diced ham or sliced pepperoni for this - but if sliced pepperoni is used - don’t add any salt at all
