I love to make this when in a hurry!! It’s wonderful!!
Grill chicken breast with Montreal Chicken seasoning on both sides.
Grill one breast per person.
Saute sliced onions and mushrooms in butter.
When chicken is finished, place on a baking pan and top the chicken with sauted mushrooms and onions and top that with Monterey and Colby shredded cheese.
Place under the broiler until the cheese melts!!
Serve with steamed broccoli or rice pilaf or whatever you have handy…
