first kick at the can here…
what makes “gnochi” too hard? too much kneading, potato, flour?
my wife likes them softer and i can’t see to get it right.
Gnocchi is a simple combination of potatoes, egg, flour and milk. It’s a great way to start making pasta at home.
If your gnocchi are too hard before cooking, you probably have too much flour in the mix. The gnocchi dough should be soft like bread dough after it’s mixed.
If your gnocchi are too hard after cooking, you probably added too much egg and the coagulation of proteins gave you a rubbery “omelet” type gnocchi.
You don’t have to trust a recipe exactly, you can always make adjustments to fit your desires.
