Uside Down Chicken, Mashed Potatoes, Green Beans & Corn Fritters

Upside Down Chicken
1 3 1/2- 4lb chicken
Seasoning to taste

Preheat oven to 450 degrees. Remove all visible fat from chicken (especially around the bottom and neck cavity). Season inside and out with your choice of seasonings. Place chicken breast side down in a foil lined/lightly greased 9 X 13 ovenproof pan. Do not cover chicken. Cook for one hour and fifteen minutes. Do not open oven during this time. Chicken will be moist and delicious. Make sure your oven temp is accurate. If not, you could have a mess on your hands. This is almost the same as the chicken you make on the grill (beer can or drunk chicken) but it is done in the oven and you don’t have to watch it as closely.

This is the absolutely the best chicken ever. You can use any spices or spice rubs you like and it comes out moist and juicy but the skin (which we discard) is quite crispy. Beats the store bought rotissere chickens all to pieces.

We are doing our Thanksgiving turkey this way. No dried out white meat ever again.
