1 envelope unflavored gelatin
1 ¼ cups skim milk, divided
1 tablespoon confectioners’ sugar
1 packet Sweet 'N Low® granulated sugar substitute
¼ cup plus 2 tablespoons heavy cream
1 teaspoon vanilla extract
In small saucepan, sprinkle gelatin over ¼ cup milk to soften. In medium-size bowl, combine remaining 1 cup milk, 1 tablespoon confectioners’ sugar, and Sweet 'N Low. Over low heat, cook gelatin mixture until gelatin dissolves completely; stir into milk mixture. Refrigerate 15 minutes, or until mixture gels. With electric mixer at medium speed, beat until fluffy. In another bowl with mixer at high speed, beat heavy cream and vanilla until stiff; fold into gelatin mixture.
