White Gazpacho

White Gazpacho

Serves 6 to 8

2 cups well washed fresh spinach leaves (small young leaves are best)
1 green pepper - seeded and coarsely chopped
3 Tbsp dill weed
2 Tbsp chopped green onions
2 cucumbers peeled, seeded and coarsely chopped
3 Tbsp mayonnaise
3 Tbsp white wine vinegar
3 Tbsp sour cream or yoghurt
2 cups chicken broth
salt and pepper to taste

Put all of the above into the food processor.
Process until smooth.
Add salt and pepper to taste.
Allow flavors to blend for several hours refrigerated.
Serve with garlic bread or croutons.

This sounds delicious. I have some friends who don’t like cold soup. Weird, huh? Can this be served hot?

I’ve never served it hot, but I don’t see anything about the ingredients that would prevent it from being served hot. Probably would be good hot.
