Whole Grain Bread Rustic Italian Stuffing

1 egg
2 Tbl. olive oil
1 cup fine diced onion
1 cup cine diced celery
1 cup fine diced red or green bell pepper
2 Tbl. fresh garlic puree
2 cups chicken broth
8 cups dried whole grain bread cubes
1 bag pine nuts (2.25 oz)
1 1/2 tsp. Italian season
1 1/2 tsp. rubbed sage
1/2 tsp. black pepper
1 tsp. salt
1/4 cup fresh chopped parsley

  1. Sweat the onions in the olive oil until soft then add the celery and cook until soft.
  2. Put the rest of the ingredients in a large mixing bowl and mix just until combined
  3. Place in a shallow baking pan and bake at 350 degrees for 45 minutes.
