WW: Macaroni Salad (2 points)
4 1/2 cups cooked macaroni, kept warm
3/4 cup fat-free mayonnaise
1/4 cup fat-free sour cream
3 tbsp sweet pickle relish
1 medium sweet red pepper, diced
1 medium green pepper, diced
1 medium carrot, diced
1/4 cup red onions), minced
1/8 tsp. table salt, or to taste
1/8 tsp. black pepper, or to taste
While macaroni is still warm, add mayonnaise, sour cream and relish; toss to coat. Add peppers, carrot and onion; toss to combine. Season to taste with salt and pepper.
Serve warm or chilled. Yields about 1/2 cup per serving.
Adding fresh vegetables for flavor, color and a nutrient boost.
