WW: Mock Coconut Cream Pie (2 points)

2 cups spaghetti squash, cooked & into strands
1 cup skim milk
1 cup egg substitute
1/2 cup evaporated skim milk
1/4 cup flour
1/4 cup sugar
2 tbsp. Brummel & Brown Yogurt Spread - plus 2 teaspoons
1/2 tsp. vanilla
1/2 tsp. coconut extract
1/2 tsp. double-acting baking powder

Preheat oven to 350ºF. Spray a 9-in. pie plate with nonstick cooking spray.

Using a back of a spoon, spread squash over bottom & up sides of plate. Set aside.

In blender combine remaining ingredients & blend until smooth. Pour mixture over squash.

Bake 50 minutes to 1 hr or until knife inserted in center comes out clean. Cool pie on rack & let stand for 1 hr.

Cover with plastic wrap and refrigerate overnight.

Serves 8. (2 pts per slice)
