Yellow Watermelon Gazpacho

Yellow Watermelon Gazpacho
Makes 20 servings


1/2 small yellow watermelon, chopped
1 medium sweet onion, chopped
2 medium yellow bell peppers, chopped
2 yellow beefsteak tomatoes, seeded and chopped
1 jalapeño, minced
1/2 English cucumber, peeled and chopped
1 cup Midori
1/4 cup Galliano
3/4 cup rice wine vinegar
2 teaspoons salt
1/2 teaspoon pepper
1/2 cup olive oil
1/4 cup mint, chiffonade, for garnish
thinly sliced cucumber, for garnish


Mix ingredients minus mint and cucumber garnish and let mellow an hour.

Purée ingredients in a food processor. Adjust seasonings. Garnish with thinly sliced cucumber and mint chiffonade.

Note: A half cup of minced parsley may be added at the end for color and a touch of flavor.
