your veggie side dish

This is very simple to make. You can use any veggies you want or a mixture of several. I like to use a mixture of broccoli, cauliflower and carrots. Measurements are approximate - I am used to eyeballing everything - and you can adjust the amounts to your liking.

VEGETABLE BAKE

1 pkg. (16 oz.) frozen broccoli cuts, partially cooked, drained
3/4 lb. Velveeta cheese, cubed
3/4 c. crushed buttery crackers (Ritz)
2 T. margarine

Preheat oven to 375°. Mix broccoli or veggies and cheese, spoon into buttered casserole. Sprinkle with crushed crackers, dot with margarine. Bake 25-30 minutes or until hot and bubbly.

NOTE: You can use fresh veggies - I usually steam them for this dish and if using all frozen veggies - I may cheat and run them under very hot water to partially thaw and use as is.

You can use any veggies for this - fresh, frozen, leftover - anything. The “cheese” sauce goes good with just about any meats, poultry or fish entrees.
