Yugoslavian White Bean Salad

Great Northern beans are perfect.

1 cup dried white beans
6 cups cold water
4 cups cold water
4 tbsp. olive oil
3 tbsp. lemon juice
1 tsp. ground coriander
Salt and black pepper
2 tbsp. finely choped parsley, preferably Italian

Soak beans overnight in 6 cups cold water.

Drain beans and put into a large saucepan with 4 cups fresh water. Bring to a boil over moderate heat, cover and simmer slowly until beans are tender, about 1 1/2 to 2 hours. Remove from heat and cool beans in the cooking liquid. Drain beans, retaining cooking liquid for other use.

Thoroughly mix beans, oil. lemon juice and coriander and season generously with salt and pepper. Refrigerate for 1 hour. Mix in parsley just before serving. Serve with crusty bread pieces to dip into the dressing. Serves 4.
