Yummy Potatoes

2 lb. bag frozen diced hash browns ( Use the plain hash browns NOT the one with onions and peppers)

16 oz. sour cream
1 can cream of mushroom soup
1/2 cup melted butter
1/2 cup onion, chopped fine
salt and pepper to taste
2 cups grated sharp cheddar cheese
2 cups crushed soda cracker crumbs
1 stick melted butter

Mix first 7 ingredients and spoon into a greased 9x13 inch baking dish.
Bake at 350 F until bubbly. Then top with cracker crumbs and melted butter and return to oven. Continue to bake until topping is crispy
