Zesty Home Fries

2 lb. red new potatoes, cut into large chunks
1/2 cup zesty Italian dressing
1/2 tsp. black pepper
1 large onion, cut into chunks
1/4 cup fresh parsley, chopped
2 slices bacon, cook crisp, crumbled
1 cup shredded sharp cheddar cheese

Preheat the oven to 450*F.

Toss potatoes with dressing and pepper in greased 15x10x1" baking pan. Spread in a single layer.

Bake 20 minutes, stir in onions. Continue baking 20 minutes or until vegetables are tender.

Sprinkle with parsley and bacon, stir. Top with cheese. Bake an additional 2 minutes or until cheese is melted.

We have this dish regular with a meat and another vegetable and a homemade crusty Italian bread.

We do one almost just like this ! I can eat them every day !
We just do a couple of things different that you may wish to try.
Try soaking the spuds in enough water to cover and 2 tbsp of vineger for 1 - 2 hours.
The water converts the carbs to sugar and the vinegar draws
extra water out of the spuds. The result is a crispier outside and a soft center.
Either way… I am now officially hungry … LOL

They are a meal unto themselves.
We are blessed enough to know a farm that sells B grade red spuds at $5 for 50 lbs all year 'round.

Thanks for the tip I will try them the next time I fix them. Wow $5 for 50 lbs. that is a steal I love potatoes any you fix them and also sweet potatoes to.
