Zucchini Carpacio

4 Zucchini
1.5 cups fresh parsley
1/3 cup Extra virgin Olive oil
Lots of Shaved romano about 1 cup
1/4 cup sliced almonds

Cut edge of Zucchini lay flat on cutting board and cut thin length wise pieces. Than juliene the pieces
Chop parsley small stems ok
have shaved cheese ready
Get a wok or good size sauce pan medium heat for a minute put EVOO in it when hot add almonds for 15 seconds turn off than add zuccini parsley shaved romano toss to coat and serve the salad.
Can add chicpeas and tomatos for a complete meal
