Zucchini Casserole


3 c. zucchini, diced
1 med. onion, diced
1 can cream of (??) soup - celery, chicken, mushroom, potato - choice
1 c. sour cream
1/2 c. shredded carrots
1 c, croutons

Steam zucchini and onions for 20 minutes. Combine with soup, sour cream, carrots and croutons. Bake 350* F. 25 minutes. Sprinkle with shredded Cheddar cheese, if desired, return to oven a few minutes to melt cheese.
