Zucchini-Potato-Garlic Soup

4 cups water or stock
4 potaotes, peeled and sliced
1 carrot, chopped
10 large cloves garlic, minced
1 t basil, dried
2 medium zucchini chopped
1/4 C minced fresh parsley
2 T minced fresh dill weed
pepper & salt

Place water, potatoes, carrots, onion, garlic and basil into soup pot and
cook til potatoes are just about done. Add in the zucchini and heat through.
Pureee 1/2 or all with hand blender or food processor. Salt and Pepper to taste.
