15 Bean Soup

◦1 – 16 oz package of 15 bean soup (Hurst Hambeens)
◦1 tablespoon salt
◦5 slices cooked crumbled bacon
◦1 ham bone or 2 smoked ham hocks
◦1 large onion, chopped
◦1 – 28 oz can diced tomatoes with juice
◦1/4 teaspoon red pepper, ground
◦1/2 teaspoon paprika
◦juice of 1 lemon
◦1 clove garlic, minced
◦Salt & pepper


1.Put beans in a large pot and cover with water.
2.Bring to a boil, remove from heat and let sit, covered 1 hour
3.Drain water and add 2 quarts of fresh water, salt, bacon & ham bone
4.Simmer 1 1/2 hours
5.Add onion, tomatoes, red pepper, paprika, lemon juice, garlic and salt & pepper to taste.
6.Simmer another hour.
7.Add seasoning packet from beans.
8.Simmer 2 minutes more.
9.Remove ham bone and pull off any meat and put back in soup and serve.
