1962 School Cafeteria Bacon Cheeseburger

2 oz. protein per serving

50 Servings

7 lb. processed cheese, grated (firmly packed)
1 c. onion, finely chopped
2 2/3 c. cooked bacon, finely chopped
1 pt. tomato catsup
1/2 c. prepared mustard
50 sandwich buns

Combine cheese, onion, bacon, tomato catsup and prepared mustard.
Cut buns in half crosswise. Spread a #24 dipper ( 2 2/3 Tbsp - 1 1/2 to 1 3/4 oz) of cheese mixture on bottom half of each bun.
Toast both bun halves cut side up for five minutes, or until buns are toasted and cheese is melted.
Replace top slice of bun on bottom slice.
Brown top of bun. Serve immediately.
