Barb’s 7 Layer Salad
1 head lettuce
1 c. celery, diced
½ to 1 c. onion, diced
1 pkg peas, frozen
4 to 5 tbsp. sugar
1 c. mayonnaise
½ c. grated Parmesan cheese (or canned)
8 oz. Colby jack cheese, shredded
5 to 6 slices crisp bacon, crumbled
Mix sugar and mayonnaise together. Make layer of each ingredient in order listed. Top with sprinkles of crumbled bacon. Let set in refrigerator 3 to 4 hours. Do not let sit overnight.

Coffee Frosting
Here is a chocolate and coffee frosting, that I use on my cakes cakes. This frosting has a great texture and can be spread easily. You don’t even need a set of scales for this one.
Ingredients:
1 tsp coffee crystals
1/4 cup milk or cream
1/4 cup cocoa powder
5 cups caster sugar
6 tbs butter
1 1/2 tsp vanilla
Preparation:
Blend everything together until smooth and spreadable. Makes enough for a 13x9 cake.
