Acorn Squash Rings

Acorn Squash Rings…with cranberries and apples!

Ingredients:

1 Acorn Squash
1/4 cup Butter
1/2 cup Cranberries
1/4 cup Sugar, brown packed
1/2 cup Apple, finely chopped
1 teaspoon Cornstarch
2 teaspoons cold water

Microwave cooking time, 12 minutes

Cut unpeeled squash into 1/4 rings with sharp knife. Remove and discard seeds. Place in shallow dish and set aside.

In 4 cup measuring cup, melt butter at High for 30-45 seconds .
Stir in cranberries and brown sugar.

Cook, uncovered at High 2-3 min or until skins have popped, stirring once.

Spoon chopped apple mixture into the hole in each ring.
Cover with plastic wrap and cook at High setting for 5-7 minuites or until tender.

Drain juice with 1 cup measure.

Dissolve cornstarch in cold water, whisk into juices.
Cook at High setting for 30-45 seconds until thickened and pour over rings.
