apple cake recipe

hi members,

years ago i was in cali and was given a really simple recipe for an apple cake, almost like an pineapple upside cake, was very moist and easy that’s all i can really remember except it was sooooooooooooooo good, lost recipe about 20 years ago, but always remember that cake, have checked numerous recipes and nothing seems to come close, it’s made in a pyrex like a 1/4 - 1/2 sheet. apples of course and the nominal spices, but that’s about it. if anyone has any ideas, i’d appreciate it. thanks for your time


3 eggs
3 1/2 c. whipped topping
2 c. graham cracker crumbs
1 1/2 c. peeled, coarsely chopped apples
1/2 c. corn syrup
1 t. cinnamon
1 t. nutmeg
1 1/3 c. chopped walnuts
1 T. softened margarine or butter

Grease 9 X 9 X 2-inch baking pan. In large bowl, be
at eggs with fork. Gently fold in whipped topping, graham cracker crumbs, apples, 1/4 c. corn syrup, cinnamon and nutmeg until blended. Spread evenly in pan. Mix remaining corn syrup, walnut pieces and margarine. Spoon evenly over batter. Bake at 350* F. 45 minutes or until cake springs back when lightly touched. Cool in pan. Serves 9.


1 pkg. (18.25 oz.) spice cake mix
2 cans (21 oz. each) apple pie filling
1 t. ground cinnamon
1 t. ground nutmeg
1 t. ground allspice
1 T. white sugar
3/4 c. butter
1 c. chopped pecans

Preheat oven to 350* F. Pour apple pie filling into 13 X 9-inch pan. In small bowl, mix together cinnamon, nutmeg, allspice and sugar. Sprinkle mixture over pie filling. Pour cake mix over apples. Dot with butter and scatter nuts on top. Bake for 45 minutes to an hour, until cake is brown on top and bubbling on the sides. Serve warm with ice cream or whipped topping.

Apple Pecan Cake

1 1/2 cups vegetable oil
2 cups sugar
3 cups plain flour
1 tsp. baking soda
1 tsp. salt
2 tsps. vanilla
3 eggs
3 cups tart apples (peeled & chopped)
1 cup chopped pecans

Mix the sugar, eggs, vanilla and oil. Sift the dry ingredients together and add to the sugar mixture, mix well. Last, fold in the apples and pecans. Bake in a greased and floured tube pan at 325 for one hour. Turn out and allow to cool completely before icing. (see below)


1 stick of butter
1 cup brown sugar
1 tsp. vanilla
1/4 cup of evaporated milk

Bring the sugar and butter to a boil. Add the vanilla and milk and return to a boil. Let it cool and then pour over the cake.


1 box white or yellow cake mix, 1 stick butter or marg.,1/2-1 cup oatmeal, 1 cup toasted chopped nuts*, 3-4 peeled, cored, sliced (firm type) apples, 3/4 cup sugar,1 tsp. cinnamon, 1 cup sour cream, 1 tsp.vanilla, 1 egg.

cut butter into cake mix till crumbly (will be quite dry). Add coconut and nuts* (I mix it all right in a 9x13 pan and spread it out)(nuts can be added now to crust or sprinkled on apple layer). Bake about 20 min @350 degrees till lightly browned & slightly puffed. Spread apples evenly over crust, sprinkle mixed sugar and cinnamon over apples (add nut also if you wish at this time). Mix sour cream, vanilla and lightly beaten egg till completely mixed and drizzle over apples so some apple still shows thru. Return to oven and bake 20-30 min. until “custard” has set. Cool slightly, cut and cool completely. Refrigerate if you don’t serve within a couple of hours.

Apple Bundt Cake

4 medium Golden Delicious apples (about 1 1/2pounds), peeled, cut into 1/3-inch pieces
5 tablespoons plus 2 1/2 cups sugar
2 teaspoons ground cinnamon
4 large eggs
1 cup vegetable oil
1/4 cup orange juice
1 tablespoon grated orange peel
1 teaspoon vanilla extract
3 cups all purpose flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
Powdered sugar

Preheat oven to 350°F. Oil and flour 12-cup Bundt pan. Mix apple pieces, 5 tablespoons sugar and ground cinnamon in medium bowl. Combine 2 1/2 cups sugar, eggs, vegetable oil, orange juice, orange peel and vanilla extract in large bowl; whisk to blend. Stir flour, baking powder and salt into egg mixture. Spoon 1 1/2 cups batter into prepared Bundt pan. Top with half of apple mixture. Cover with 1 1/2 cups batter. Top with remaining apples, then batter.

Bake cake until top is brown and tester inserted near center comes out with moist crumbs attached, about 1 hour 30 minutes. Cool cake in pan on rack 15 minutes. Run knife around sides of pan to loosen. Turn cake out onto rack. Cool at least 45 minutes. Dust with powdered sugar. Serve slightly warm or at room temperature.

Makes 8 to 10 servings.

Apple Cake with Brown Sugar Icing

For the Cake:
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups canola oil
3 eggs
2-1/4 cups sugar
2 teaspoons vanilla extract
2 cups chopped pecans
3 cups chopped apples (peeled) OR one 20-ounce can of Comstock sliced apples (not Apple Pie Filling), drained and diced
For the Brown Sugar Icing:
1/2 cup butter
1/2 cup brown sugar, packed
1/4 cup milk

Preheat oven to 350°F. Grease and flour a 10-inch tube pan.
Combine flour, baking soda and salt. Stir well, and set aside.
Combine oil, eggs, sugar and vanilla. Beat at medium speed for 3 minutes. Add dry ingredients at low speed. Batter will be thick. Add pecans and apples at low speed.
Pour batter into prepared tube pan, and bake at 350°F for 1 hour and 30 minutes, or until cake tester comes out clean when inserted in center of cake. Cool in pan for 10 minutes, then invert on serving plate and remove pan. Drizzle Brown Sugar Icing over warm cake.
Brown Sugar Icing:

Combine butter, brown sugar and milk in a heavy saucepan. Over medium-high heat, bring mixture to a full boil. Cook, stirring constantly, for 3 minutes. Let cool to lukewarm.

Apple Butter Cake

  1 c  Butter; melted
  2 c  Sugar
  2    Eggs
  2 c  Flour

1 1/2 ts Soda
2 ts Cinnamon
1 ts Cloves
1 ts Nutmeg
1/2 ts Salt
2 ts Vanilla
1 c Chopped pecans
3 c Chopped apples

Stir sugar into cooled butter. Mix in eggs, then
flour, soda, spices, salt and vanilla. Fold in
nuts and apples. Bake in a well greased, floured
tube pan for 1 1/2 hours at 325°.

Makes 1 tube cake.


2 Gala apples, about 12 oz.
1 pkg. (18.25 oz.) yellow cake mix
1 1/3 c. apple cider
3 eggs
½ c. sour cream
1 t. ground cinnamon
1 t. grated lemon zest
Vanilla frosting

Preheat oven to 350* F. Spray 2 9-inch baking pans. Peel, core and grate 1 apple; squeeze dry; reserve. Beat cake mix, cider, eggs, sour cream and cinnamon on low speed; increase speed and beat 2 minutes. Stir in grated apple. Divide between pans. Bake 25 to 30 minutes or until done. Cool 5 minutes; remove; cool completely. Stir lemon zest into frosting. Core and chop remaining apple. Spread 1 c. frosting between layers; press remaining apple into frosting. Frost cake with remaining frosting.
