Apple Doodles

Found this recipe in an old book from a garage sale…delish!

2 2/3 c. flour
2 tsp. baking powder
1/2 tsp. cinnamon, divided
1/8 tsp. nutmeg
1/4 tsp salt
1/2 c. butter, softened
1/2 c. plus 2 Tbs. granulated sugar
1/2 c. firmly packed brown sugar
2 eggs, lightly beaten
1 tsp vanilla
1 c. peeled shredded aples

Sift together flour, baking powder, 1/4 tsp of the cinnamon, nutmeg and salt; set aside.

Cream together butter, 1/2 c. of the granulated sugar and the brown sugar. Add eggs and vanilla; mix well.

Stir flour mixture into butter mixture; stir in apples.

In a small dish, stir together remaining sugar and cinnamon. Shape into balls with a teaspoon and roll in cinnamon-sugar.

Bake on greased baking sheet at 350 degrees for 12 to 15 minutes or until golden brown.

Makes about 5 dozen.

Those sound yummy! I have an abundance of apples right now, think I’ll try it this weekend!
